At Fiasco, we believe that the key to success is finding something you love, striving everyday to be better at it, and always remembering to be humbled by where you've come from. Our collaborative group of like-minded individuals allows us to continue our pursuit of greatness, while making the greatest gelato around.
Every single day in our Cucina, we take the freshest ingredients we can find, add a few more naturally delicious things, then create our very best ensemble for you to enjoy.
Our goal is simple; to enrich people's lives each and everyday. We just happen to do it by making gelato.

A word that should only be reserved for an elite, committed craft, "Gelato" is the age-old Italian art of frozen dessert. Artisan Gelato is a true commitment to the respect it deserves; it's hand-crafted small batches. It's created with fresh local milk, cane sugar and seasonal fresh fruit. It's nuts from Sicily & Piedmont, the world's finest chocolates, and other premium ingredients. It's the difference between Fiasco and the other guys.
The art of making a Premium Gelato is different in that it produces a smoother, more flavourful product with less air, sugar and 1/3 the fat of traditional ice cream.
Sorbetto is a dairy-free version, made the same way as Gelato, minus the milk. Sorbetto is fat-free, dairy-free, and full of natural flavour.
Ashley's enthusiasm for Fiasco and pastry schooling made her an ideal candidate for growing our kitchen team. She is quickly becoming a force to be reckoned with, and soon will be hosting our Gelato Academy classes! Gelato detention anyone?
Austin has quickly become an integral part of Fiasco's daily operations. Between production, the gelato truck and anything else thrown his way, he has truly done his best to embody all that is Fiasco. And if you're sneaky you can catch his dance moves when he thinks no one is looking.
Once a cafe manager at our Kensington location, then an apprentice gelato chef, Brittany has become an asset to the Fiasco Team. With a strong knowledge of our brand & market trends, she is the perfect candidate for being the on-line voice of our brand. And it doesn't hurt one bit that her milkshake brings all the boys to the yard.
Crystal is a machine in the kitchen. Whether she is zesting & juicing lemons, building a recipe, or pulling a freshly spun batch, she's got this. The only thing now is to get her some stilts so she can reach the top shelf in the fridge!

Seemingly having the ability to freeze time & accomplish more work in a day than most do in a week, James is the captain of our ship. His passion is contagious & love for life truly make a day at Fiasco feel like a playoff win. Inspiration, and his mean affogato, are what make him a great leader.
John's tenured knowledge of several aspects of our business make him a huge addition to our team. His enthusiasm for our vision and longterm success is a valuble asset in our pursuit of greatness. He is resposible for ensuring our wheels don't fall off while we shoot for the moon.
Kasia has been a fan of Fiasco for years, and her knowledge of the industry is more than we could ask for. Her role within our team allows her to share both of these assets with those we work with, to change the way business between supplier & customer is done.
Michael's excitement and willingness to adapt makes him a superstar within our team! He's the newest member of Team Fiasco, and we are sure that his love for what we do can only grow. Plus, he's always got something cheeky to say.
The eldest of our group at 70, Shaka provides a warm welcome to anyone, and helps us get the seal of approval from an impartial judge. He's been around since the beginning, and has grown along side Fiasco. If you're having a downer day, stop by for a scoop on him.

Our roots are in Calgary, Alberta, although Fiasco is also available in premiere restaurants, premium cafes and specialty groceterias throughout Canada and parts of the United States.
